Committed to cultivating olive groves for three generations, the family takes great care to maintain the high standards which enable them to produce the highest quality nectar.HOW IT IS MADE...The secret to the fine quality of the "L'Antico Ulivo" brand oil lies in the fact that the olive groves are not exposed to chemical spraying. When the olives are perfectly ripe, they are hand-picked off the trees and placed in baskets to breathe. They are then transported to the pressing plant where they are rinsed of impurities and immediately crushed in the traditional dragstone mills. The crushed olives are pressed exclusively in the cold-press method, thus producing the "L'Antico Ulivo" extra virgin olive oil.THE PRODUCTRecent epidemiological research regarding the relation between the nature of fats in dietary habits and the incidence of cardiovascular diseases and atherosclerosis have pointed out the importance of olive oil to determine among the consumers a low incidence of such pathologies.
These results are closely linked to the composition of olive oil fats and
particularly to the high percentage of a monounsaturated fat, the high oleic
acid, and to the balanced contents of saturated and polyunsaturated fats. As
